2 tbsp coconut oil
1 medium onion
finely chopped
3 cloves garlic
minced
1-inch ginger piece
grated
1 tsp ground allspice
1 small pumpkin
peeled, deseeded, and diced
1 can coconut milk (400 ml)
2 cups vegetable stock

For the Noodles

8 oz rice noodles
1 tbsp soy sauce
1 tsp sesame oil

For the Piquant Pepper Sauce

2 scotch bonnet peppers
deseeded and finely chopped
1/4 cup white vinegar
1 tbsp sugar
1 clove garlic
minced

For Garnishing

Fresh cilantro leaves
roughly chopped

Marinating the Pumpkin

In a large bowl, toss the diced pumpkin with 1 tsp allspice and a pinch of salt.
