Larb is a classic Thai dish combining savory, spicy, and tangy flavors. It features minced meat with roasted rice powder and fresh herbs.

Ingredients

For the Meat

500g minced chicken or pork
Choose either chicken or pork
1 tablespoon vegetable oil
3 cloves garlic, minced

For the Dressing

2 tablespoons fish sauce
2 tablespoons lime juice
1 tablespoon palm sugar
1-2 teaspoons chili flakes
Adjust to taste

For the Roasted Rice Powder

2 tablespoons sticky rice

For the Salad

1 large shallot, thinly sliced
1/2 cup fresh mint leaves
1/4 cup fresh cilantro, chopped
1/4 cup green onions, chopped

Marinating the Meat

Combine meat and garlic

In a bowl, mix the minced meat with garlic and a pinch of salt.

Marinate

Let it marinate for at least 15 minutes.

While waiting, prepare the other ingredients.

Preparing the Roasted Rice Powder

Toast the rice

In a dry skillet, toast the sticky rice over low heat until golden brown.

Ensure the sticky rice is not burnt while toasting; it should be consistently golden brown.

Grind the rice

Allow it to cool, then grind into a coarse powder using a mortar and pestle.

Use a coffee grinder for a quick way to turn the toasted rice into powder.

Set aside

Set aside for later use.

Cooking Process

Sauté the meat

Heat oil in a pan over medium-high heat and add the marinated meat. Cook until no longer pink.

Sautéing time: 8-10 minutes on medium-high heat.

Prepare the dressing

In a bowl, combine fish sauce, lime juice, palm sugar, and chili flakes. Adjust seasoning to taste.

This takes about 5 minutes.

Combine everything

Toss the cooked meat with the dressing, shallot, roasted rice powder, mint, cilantro, and green onions. Mix everything well.
