500g ground lamb
(or beef)
1 medium onion
grated
2 cloves garlic
minced
1/4 cup fresh parsley
finely chopped
1 tsp ground cumin
1 tsp ground coriander
1 tsp paprika
Salt and pepper

For the Sumac Onions

2 large red onions
thinly sliced
1 tbsp ground sumac
2 tbsp olive oil
Juice of 1 lemon
Salt
to taste

For the Yoghurt Sauce

1 cup plain Greek yoghurt
1 clove garlic
minced
1 tbsp lemon juice
Salt and pepper
to taste

For the Flatbreads

4 pita or flatbreads
Olive oil
for brushing
Pinch of salt
