Ingredients

For the Marinade

1 kg chicken
cut into medium pieces
2 tbsp yogurt
1 tbsp lime juice
1 tsp turmeric powder
1 tsp red chili powder
Salt
to taste

For the Masala Paste

10 dried red chilies
soaked
1 tbsp coriander seeds
1 tsp cumin seeds
1 tsp fennel seeds
6 garlic cloves
1 inch ginger
piece
2 tbsp water

For Cooking

3 tbsp ghee
2 onions
thinly sliced
A handful of curry leaves
1 tsp mustard seeds

For Garnishing

Fresh coriander leaves
chopped

Marinating the Chicken

Mix Marinade

In a large bowl, mix yogurt, lime juice, turmeric, chili powder, and salt together.

Coat Chicken

Add the chicken pieces to the marinade and coat well.

Cover and refrigerate for at least 2 hours, preferably overnight.

Marinate overnight for best flavor.

Preparing the Masala Paste

Grind the soaked red chilies along with coriander seeds, cumin seeds, fennel seeds, garlic, ginger, and water into a smooth paste.
