strawberries, raspberries, blackberries, washed and hulled
3 cups water
1/2 cup sugar
adjust to taste
2 tablespoons cornstarch
1 tablespoon lemon juice

Fresh mint leaves

Blend the berries in a blender until smooth.

Pass the puree through a fine sieve to remove seeds.

Set the seedless puree aside for later.

Preparing the Cornstarch Mixture

Dissolve cornstarch

In a small bowl, dissolve the cornstarch in 1/4 cup of cold water.

Stir until the cornstarch has fully dissolved.

In a saucepan, combine the berry puree, water, and sugar. Heat until the mixture begins to boil.

Use medium high heat.

Slowly add the cornstarch mixture to the boiling berry juice, stirring constantly until thickened.

Maintain medium low heat.

Cooling the Kissel

Remove from heat and stir in the lemon juice. Let cool to room temperature, then chill in the refrigerator.
