For the Pork Belly Marinade

1 lb pork belly
skin-on, cut into 1-inch cubes
3 stalks lemongrass
finely chopped
4 cloves garlic
minced
2 tablespoons soy sauce
1 tablespoon fish sauce
1 tablespoon brown sugar
1 teaspoon ginger
minced

For the Chili Glaze

2 tablespoons chili paste
2 tablespoons honey
1 tablespoon vinegar
1 tablespoon soy sauce
1 teaspoon sesame oil

For Frying

2 cups vegetable oil

For Garnishing

2 tablespoons fresh cilantro
chopped
1 red chili
sliced thin

Marinating the Pork Belly

Combine lemongrass, garlic, soy sauce, fish sauce, brown sugar, and ginger in a bowl.

Add pork belly cubes to the marinade and mix until well coated.

Cover and refrigerate for at least 2 hours or overnight for deeper flavor.

Preparing the Chili Glaze

In a small saucepan, combine chili paste, honey, vinegar, soy sauce, and sesame oil.

Heat vegetable oil in a deep skillet to 350°F and fry pork belly pieces until golden and crispy.

Ensure pork rests at room temperature for 30 minutes before frying. Blanch the pork belly cubes in boiling water for 5 minutes for extra crispiness.

Toss fried pork belly in the prepared chili glaze until evenly coated.
