Provence honey
1/4 cup
Water
2 tbsp
Dried culinary lavender
1 tsp

For the Madeleines

All-purpose flour
2/3 cup
Baking powder
1/2 tsp
Salt
1/4 tsp
Eggs
2 large, room temperature
Granulated sugar
1/2 cup
Lemon zest
Zest of 1 lemon
Vanilla extract
1/2 tsp
Unsalted butter, melted and cooled
1/2 cup, plus extra for greasing

Making the Lavender Honey Syrup

Combine ingredients

Combine honey, water, and lavender in a small saucepan.

Simmer

Bring to a gentle simmer over low heat and stir continuously.

Steep and strain

Remove from heat, cover, and let steep for 10 minutes. Strain and cool.

Preparing the Madeleine Batter

Sift dry ingredients

Sift together flour, baking powder, and salt in a small bowl.

Beat eggs and sugar

In another bowl, beat eggs and sugar until thick and pale.

Fold in ingredients

Carefully fold in the flour mixture, lemon zest, vanilla extract, and cooled lavender honey syrup. Gradually fold in the melted butter. Cover and refrigerate the batter for 1 hour.

⚠ Over-mixing can result in tough madeleines. 💡 Use a pastry brush to thoroughly butter the madeleine mold for even baking.
