For the Frico

Montasio cheese
200g, grated
Potatoes
2 large, peeled and grated
Olive oil
2 tablespoons
Salt
to taste
Fresh black pepper
to taste

For the Dressing

Olive oil
3 tablespoons
Balsamic vinegar
1 tablespoon
Dijon mustard
1 teaspoon
Salt
to taste
Fresh black pepper
to taste

For the Garnish

Fresh parsley
chopped
Lemon zest
finely grated

Preparation


Preparing the Potato Mixture

Peel and grate

Peel and grate the potatoes using a box grater.

Drain moisture

Squeeze out excess moisture from the grated potatoes using a clean cloth or paper towel.

Mix and season

Mix the grated potatoes with half of the Montasio cheese and season with salt and pepper.

Preparing the Dressing

Combine ingredients

In a small bowl, whisk together olive oil, balsamic vinegar, and Dijon mustard.

Season

Season the dressing with salt and pepper to taste.

Cooking Process

Making the Frico

Heat olive oil in a non-stick pan, spread a layer of potato mixture, cook until golden and crispy on one side, then flip.

Finishing the Frico

Sprinkle remaining cheese on top before flipping the last time for a crispy cheese crust.

Assembling the Frico

Remove from pan, drain on paper towel, and repeat with remaining mixture.
