Ingredients

For the Mysore Pak Base

1 cup chickpea flour (besan)
sifted
1 cup ghee
melted and warm
1 ¼ cups sugar
½ cup water

1 teaspoon cardamom powder

Preparing the Besan (chickpea flour)

Sift the Flour

Sift the chickpea flour into a large, dry pan.

Roast the Flour

Roast over medium heat, stirring continuously until it emits a nutty aroma.

Ensure the flour does not burn; burnt flour can ruin the flavor. Pro Tip: Stir continuously to achieve an even roast.

Cool the Flour

Transfer to a bowl and let cool.

Heating the Ghee

In a separate pan, gently heat the ghee until warm but not smoking.

Keep the ghee on low heat, ready for use.

In a large pan, dissolve sugar in water over medium heat until it reaches a one-string consistency.

Add the roasted flour to the syrup, stirring constantly to prevent lumps.

Gradually add the warm ghee and cardamom powder, mixing continuously until the mixture thickens and starts leaving the sides of the pan.
