Green plantains
4 large
Vegetable oil
1 cup, for frying

For the Black Beans

Cooked black beans
2 cups (or 1 can, drained)
Olive oil
1 tablespoon
Onion
1 small, finely chopped
Garlic
2 cloves, minced
Cumin
1 teaspoon
Salt and pepper
To taste

For the Garlic Mojo

Olive oil
1/4 cup
Garlic cloves
6, thinly sliced
Fresh lime juice
1/4 cup
Salt
1/4 teaspoon
Fresh oregano
1 teaspoon, chopped

Prepping the Tostones

Slice Plantains

Peel the green plantains and slice them into 1-inch thick rounds.

Preheat the vegetable oil in a large skillet over medium heat.

Fry Plantains

Fry the plantain slices in batches until lightly golden, about 3 minutes per side.

Preparing the Black Beans

Heat Oil

In a medium skillet, heat olive oil over medium heat.

Add Aromatics

Add chopped onion and garlic; sauté until fragrant and translucent.

Combine Beans

Stir in black beans and cumin, seasoning with salt and pepper; simmer for 10 minutes.

Slightly mash half of the black beans for a creamier texture.

Cooking Process

Make Garlic Mojo

Heat olive oil in a small saucepan over low heat, add garlic slices, and cook until golden brown, then remove from heat and stir in lime juice, salt, and oregano.

Use low heat to avoid burning the garlic.

Finish Tostones

Press each fried plantain slice down with a flat surface to flatten, then re-fry in hot oil until crispy and golden.

Use medium heat for frying; initial fry about 10 minutes, second fry about 5 minutes.

Assemble Tostones

Spoon the black beans over the crispy tostones and drizzle with garlic mojo.
