Brazilian Avocado and Shrimp Ceviche with Citrus Dressing

Ingredients

For the Ceviche

1 lb (450g) shrimp
peeled and deveined, cut into small pieces
2 ripe avocados
diced
1 medium red onion
finely chopped
1 small red bell pepper
diced
1 small green bell pepper
diced
1 jalapeño
seeded and finely chopped
1/4 cup (60ml) fresh cilantro
chopped

For the Citrus Dressing

1/3 cup (80ml) fresh lime juice
1/4 cup (60ml) fresh orange juice
2 tbsp olive oil
1 tsp sea salt
1/2 tsp black pepper

For the Marinade

2 cloves garlic
minced
1/2 cup (120ml) lemon juice
1 tbsp honey

Preparation


Marinating the Shrimp

Combine ingredients

In a medium bowl, combine shrimp with garlic, lemon juice, and honey.

Refrigerate

Cover and refrigerate for 30 minutes to allow flavors to meld.

Drain shrimp

Drain off excess marinade before using in ceviche.

Be sure to drain excess liquid from shrimp before combining with vegetables.

Preparing the Vegetables

Dice avocados

Dice the avocados and transfer them into a medium bowl.

Add the chopped onion, bell peppers, jalapeño, and cilantro.

Set aside until ready to combine with shrimp.

Keep avocado pieces covered to prevent browning.

Cooking Process

Combine marinated shrimp with the prepared vegetables, gently folding to mix.

Whisk together lime juice, orange juice, olive oil, salt, and pepper, then pour over ceviche.
