Preparing the Dough
Combine dry ingredients
In a large bowl, combine flour, sugar, and salt.
Add liquids
Make a well in the center and add olive oil and warm water.
Ensure the water is warm, not hot, to avoid killing the yeast.
Knead the dough
Mix until a dough forms, then knead for 5-7 minutes on a floured surface until smooth.
Let the dough rest for 30 minutes to an hour for better elasticity.
Preparing the Zaatar Mix
Combine spices and seeds
In a small bowl, mix the dried thyme, sesame seeds, sumac, and salt.
Form a paste
Slowly add olive oil, mixing to form a paste.
Set aside
Set aside for topping the flatbreads.
Cooking Process
Roll the dough
Divide dough into six equal portions and roll each into a thin circle.
Apply Zaatar mix
Spread a generous amount of Zaatar mix over each rolled dough.
Bake flatbreads
Preheat oven to 450°F (230°C) and bake on a preheated stone or baking sheet for 7-10 minutes until golden.
