Chef’s Tip:

Preparation

Preparing the Snow Fungus

1

Rinse the snow fungus

Rinse the dried snow fungus under running water.

2

Soak the snow fungus

Soak the snow fungus in water for 30 minutes until it becomes soft and plump.

Ensure that the snow fungus is fully rehydrated and soft before cooking to avoid toughness.

3

Trim and cut

Trim any hard parts and cut the snow fungus into small florets.

Preparing the Sweet Soup Base

1

Rinse the longan

Rinse the dried longan thoroughly.

2

Prepare the water chestnuts

Rinse, peel, and slice the water chestnuts thinly.

3

Tie the pandan leaves

Wash the pandan leaves and tie them into a knot if using.

Use fresh pandan leaves for a more aromatic sweetness.

Cooking Process

1

Boiling the Base

In a large pot, bring 4 cups of water to a boil. Add the pandan leaves, longan, and sliced water chestnuts.

2

Simmering Sweetness

Lower the heat and let the mixture simmer for 20 minutes.

3

Finishing Touch

Add the snow fungus and rock sugar, cooking for another 10 minutes. Stir in coconut milk before serving.

Never leave hot oil unattended. Keep a lid nearby …
