Ingredients

For the Tart Shell

1 sheet of puff pastry, thawed
1 egg, beaten
for egg wash

For the Onion Jam

3 large red onions
thinly sliced
2 tbsp olive oil
3 tbsp balsamic vinegar
2 tbsp honey
Salt and pepper to taste

For the Filling

200g raclette cheese
thinly sliced or grated
2 tbsp fresh thyme leaves
1/2 tsp freshly ground black pepper

For the Garnishing

Fresh thyme sprigs

Preparation


Preparing the Onion Jam

Heat oil

Heat olive oil in a large pan over medium heat.

Cook onions

Add onions and a pinch of salt, stirring occasionally, until soft and caramelized (about 20-25 minutes).

Add vinegar and honey

Stir in balsamic vinegar and honey, allowing to cook for another 5 minutes until thickened.

Preparing the Tart Shell

Preheat oven

Preheat oven to 200°C (390°F).

Prepare pastry

Roll out the puff pastry on a floured surface and carefully place it in a tart pan. Trim excess edges.

Blind bake prep

Prick the base with a fork and brush with egg wash.

Ensure there are no air bubbles beneath the puff pastry to keep it crisp. Chill the prepared tart shell in the freezer for 10 minutes before baking to prevent shrinking.

Cooking Process

Blind bake the pastry shell in the preheated oven for 15 minutes until lightly golden.

Assemble Tart

Spread the onion jam evenly over the baked tart shell, then layer with raclette cheese and sprinkle thyme leaves over the top.

Bake the assembled tart in the oven until the cheese is bubbly and golden (about 15-20 minutes).
