Cook the Lentils
In a saucepan, bring the lentils and water to a boil. Reduce heat and simmer until lentils are tender, about 15-20 minutes. Drain any excess water.

In a skillet, heat olive oil over medium heat. Sauté onions and garlic until onions are translucent.

Combine and Season
Add cooked lentils to the skillet along with cumin, coriander, cinnamon, salt, and pepper. Cook for another 5 minutes. Stir in the parsley.
Assembling the Phyllo Rolls

Preheat your oven to 375°F (190°C).

Layer and Butter Phyllo
Lay a sheet of phyllo on a clean surface and brush with melted butter. Place another sheet on top and repeat until you have 4 layered sheets.
Tip: Cover unused phyllo sheets with a damp cloth to prevent drying out.

Place 2-3 tablespoons of lentil filling on one end of the phyllo and roll tightly. Repeat with the remaining sheets and filling.
Tip: Take care not to overfill the phyllo as it may tear.
