For the Chorizo Filling

8 oz spicy Argentine chorizo
removed from casing and crumbled
1 small onion
finely chopped
2 cloves garlic
minced
1 red bell pepper
diced
1 tsp smoked paprika

For the Chimichurri Sauce

1 cup fresh parsley
finely chopped
3 cloves garlic
minced
2 tbsp red wine vinegar
1/2 cup olive oil
1 tsp dried oregano
Salt and pepper
to taste

For the Pastry

2 cups all-purpose flour
1/2 cup unsalted butter
chilled and cubed
1/4 tsp salt
1/4 cup ice-cold water

For the Egg Wash

1 egg
beaten
1 tbsp milk

Marinating the Chorizo Filling

In a medium skillet over medium heat, cook the chorizo until browned.

Add onion, garlic, and red pepper. Sauté until soft.

Stir in smoked paprika and set aside to cool.

Ensure the filling is completely cooled before assembling pastries.

Preparing the Chimichurri Sauce

In a bowl, combine parsley, garlic, red wine vinegar, and oregano.
