For the Dough

All-purpose flour

Salt
1 tsp
Warm water
1 ½ cups
Olive oil
2 tbsp

Crumbled feta cheese
1 ½ cups
Fresh thyme leaves
1 tbsp
Lemon zest
1 tbsp
Ground black pepper
1 tsp

Making the Dough

Combine Dry Ingredients

In a large bowl, combine flour and salt.

Gradually add warm water and olive oil, mixing until a dough forms.

Knead and Rest

Knead the dough on a floured surface for 10 minutes until smooth and elastic. Let it rest for 30 minutes, covered with a damp cloth.

Ensure the dough is rested sufficiently for at least 30 minutes for optimal elasticity.

Preparing the Filling

Combine Filling Ingredients

In a medium bowl, combine crumbled feta, fresh thyme, lemon zest, and black pepper.

Mix Well

Mix well to evenly distribute the thyme and lemon zest.

Chill Filling

Keep the mixture refrigerated until ready to use.

Use freshly picked thyme for a burst of flavor.

Cooking Process

Roll Out the Dough

Divide the rested dough into four equal pieces and roll each into a thin circle.

Add the Filling

Spread the feta mixture over half of each dough circle, leaving the edges free.

Seal and Cook

Fold the dough over to enclose the filling, press edges to seal. Cook on a preheated skillet until golden brown, about 3-4 minutes per side.

For a crispier texture, cook the gözleme on a well-heated skillet without oil initially and finish with a light brush of olive oil.
