Ingredients

Tomato Jam

Tomatoes
4 cups, finely chopped
Granulated sugar
1 cup
White vinegar
2 tablespoons
Fresh ginger
1 teaspoon, grated
Ground cinnamon
1/2 teaspoon
Ground cloves
1/4 teaspoon

Balsamic Reduction

Balsamic vinegar
1 cup
Honey
2 tablespoons

Bruschetta

Baguette
1, sliced into 1/2 inch rounds
Garlic cloves
2, halved
Olive oil
2 tablespoons
Salt & pepper
To taste

Fresh basil leaves

Preparing the Tomato Jam

Combine ingredients

Place the chopped tomatoes in a medium saucepan over medium heat.

Add sugar, vinegar, ginger, cinnamon, and cloves. Stir well.

Let it simmer, stirring occasionally, until thickened (about 45-60 minutes).

Preparing the Balsamic Reduction

Mix vinegar and honey

In a small saucepan, combine balsamic vinegar and honey over medium-high heat.

Bring to a boil, then reduce heat to low.

Simmer until thick

Simmer until the mixture reduces by half and coats the back of a spoon.

Do not leave the balsamic reduction unattended as it can burn quickly. Use a non-stick saucepan for easier clean-up.
