Chef’s Tip:

Preparation

Marinating the Chicken Wings

1

Blend the Marinade

In a blender, combine mango, habanero peppers, honey, lime juice, garlic, soy sauce, and ginger. Blend until smooth.

Wear gloves when handling habanero peppers to avoid skin irritation.

2

Marinate Wings

Place chicken wings in a large bowl, pour the marinade over them, and toss to coat evenly.

3

Chill

Cover and refrigerate for at least 1 hour, or overnight for deeper flavor.

Preparing the Glaze

1

Combine Ingredients

In a small saucepan, combine orange juice and brown sugar.

2

Reduce Glaze

Heat over medium heat until the sugar dissolves and the mixture reduces slightly.

3

Add Butter

Stir in butter until melted and keep warm for basting.

Cooking Process

1

Preheat Grill

Preheat your grill to medium-high heat.

2

Grill Wings

Place marinated wings on the grill, turning occasionally, for even charring.

Use a fork to test wing doneness; the meat should easily pull away from the bones.
3

Apply Glaze

During the last 5 minutes of grilling, brush wings with the prepared glaze.

Never leave hot oil unattended. Keep a lid nearby …
