Ingredients

For the Pork Marinade

Pork shoulder
1.5 lbs, cut into 1-inch cubes
Garlic
3 cloves, minced
Paprika
1 tbsp
Salt
1 tsp
Black pepper
1 tsp
Olive oil
2 tbsp
Apple cider vinegar
2 tbsp

For the Vegetable Base

Onion
1 large, chopped
Carrots
2, diced
Celery stalks
2 stalks, diced
Potatoes
3, peeled and cubed
Red bell peppers
2, diced

For the Broth

Beef stock
4 cups
Water
2 cups
Bay leaf

Thyme
1 tsp
Salt and pepper to taste

For the Finishing Touches

Sour cream
1/2 cup
Fresh parsley
1/4 cup, chopped

Preparation


Marinating the Pork

Prepare Marinade

Combine minced garlic, paprika, salt, black pepper, olive oil, and apple cider vinegar in a large bowl.

Add Pork

Add pork cubes to the marinade, ensuring they are fully covered.

Marinate

Cover and refrigerate for at least 1 hour, or preferably overnight.

For best results, marinate overnight.

Preparing the Vegetables

Chop Vegetables

Chop the onion, carrots, celery, potatoes, and red bell peppers.

Prevent Browning

Keep potatoes submerged in cold water to prevent browning until ready to cook.

Set Aside

Set the vegetables aside until needed.

Cooking Process

Brown the Pork

Heat 2 tbsp of olive oil in a large pot over medium-high heat. Add the marinated pork and cook until browned on all sides. Remove and set aside.

Timing: 10 min. Heat: Medium-high.

Sauté Vegetables

Add chopped onion, carrots, and celery to the pot. Sauté until softened, about 5 minutes.

Timing: 5 min.

Simmer the Stew

Return the pork to the pot. Add potatoes and bell peppers. Pour in beef stock and water, add the bay leaf and thyme. Bring to a gentle simmer and cook for 1.5 hours.

Timing: 1 h 30 min. Heat: Low.
