Ingredients

For the Dumpling Dough

2 cups all-purpose flour
plus extra for dusting
1/2 cup water
1 large egg
1/2 teaspoon salt

For the Lamb Filling

1 lb ground lamb
1 small onion, finely chopped
2 cloves garlic, minced
1 teaspoon ground cumin
1 teaspoon dried mint
Salt and pepper to taste

For the Garlic Yogurt Sauce

2 cups plain yogurt
3 cloves garlic, crushed
Pinch of salt

For the Sumac Butter

4 tablespoons unsalted butter
1 teaspoon ground sumac
Pinch of salt

Preparing the Dough

In a large bowl, combine flour and salt.

Make a well in the center; add water and egg.

Mix gently and knead until smooth (about 8 minutes).
