Ingredients

For the Tofu Marinade

400g firm tofu
cut into cubes
2 limes
juiced and zested
3 tablespoons soy sauce
2 tablespoons olive oil
2 teaspoons chili flakes
1 teaspoon ground black pepper

For the Peanut Sauce

100g roasted peanuts
finely chopped
1 tablespoon peanut oil
1 medium onion
finely chopped
2 cloves garlic
minced
1 teaspoon ground cumin
1 teaspoon smoked paprika
250ml vegetable stock

For the Yassa Base

1 red pepper
sliced
1 green pepper
sliced
2 medium carrots
julienned
1 tablespoon white vinegar
Salt
to taste

For Garnishing

Fresh cilantro
chopped
Sliced chili
