Preparing the Plantain Fufu

1

Boil Plantains

Boil plantains in water until soft, about 15 minutes.

2

Mash Plantains

Mash the boiled plantains until smooth.

3

Mix with Cassava Flour

Gradually mix in cassava flour, kneading until the mixture forms a smooth dough.

Preparing the Egusi Chicken Soup

1

Sauté Onions

In a large pot, heat palm oil and sauté onions until translucent.

2

Brown Chicken

Add chicken pieces and brown them on all sides.

Ensure the chicken is cooked through before simmering with egusi to avoid raw flavors.

3

Add Egusi and Broth

Stir in the ground egusi, tomato blend, chicken broth, and spices.

Soak egusi in water for 10 minutes before cooking for a creamier texture.

Cooking Process

1

Simmering the Soup

Cook the mixed soup for 20-30 minutes until thickened.

2

Cooking the Chicken

Ensure the chicken is tender and fully cooked.
