Lemon juice

Cornstarch slurry
1 tbsp cornstarch + 1 tbsp water

For the Red Bean Paste

Store-bought red bean paste

Making the Dough

Combine Dry Ingredients

In a large bowl, mix flour, icing sugar, and baking powder.

Add cold butter and rub into dry ingredients until it resembles coarse crumbs.

Mix in egg yolk and milk until a dough forms. Wrap and chill for 30 minutes.

Chill for at least 30 minutes to prevent sticking.

Preparing the Pineapple Filling

Combine pineapple, sugar, and lemon juice in a saucepan over medium heat and cook until the pineapple softens.

Stir in the cornstarch slurry and cook until the filling thickens.

Allow the filling to cool completely before using.

Ensure the filling is completely cooled to prevent melting the dough.
