Lebanese Spiced Lentil Rolls with Sumac Yogurt Drizzle

Ingredients

For the Lentil Filling

1 cup green lentils
rinsed and drained
2 cups water
1 medium onion
finely chopped
2 tablespoons olive oil
2 garlic cloves
minced
1 teaspoon ground cumin
1 teaspoon ground coriander
1/2 teaspoon ground cinnamon
Salt and pepper to taste
2 tablespoons fresh parsley
chopped

For the Phyllo Roll

8 sheets of phyllo pastry
1/4 cup melted butter

For the Sumac Yogurt Drizzle

1 cup plain yogurt
1 tablespoon sumac
1 tablespoon lemon juice
Salt to taste

Preparing the Lentil Filling

Cook the Lentils

In a saucepan, bring the lentils and water to a boil. Reduce heat and simmer until lentils are tender, about 15-20 minutes. Drain any excess water.

Sauté Aromatics

In a skillet, heat olive oil over medium heat. Sauté onions and garlic until onions are translucent.

Combine and Season

Add cooked lentils to the skillet along with cumin, coriander, cinnamon, salt, and pepper. Cook for another 5 minutes. Stir in the parsley.

Assembling the Phyllo Rolls

Preheat the Oven

Preheat your oven to 375°F (190°C).

Layer and Butter Phyllo

Lay a sheet of phyllo on a clean surface and brush with melted butter. Place another sheet on top and repeat until you have 4 layered sheets.

Cover unused phyllo sheets with a damp cloth to prevent drying out.

Fill and Roll

Place 2-3 tablespoons of lentil filling on one end of the phyllo and roll tightly. Repeat with the remaining sheets and filling.

Take care not to overfill the phyllo as it may tear.

Bake the Rolls

Place the assembled rolls on a baking sheet lined with parchment paper and bake for 20-25 minutes, or until golden brown.
