2 medium-sized eggplants
Egg
1 large egg, beaten
All-purpose flour
1/2 cup
Breadcrumbs
1/2 cup
Parsley
1/4 cup, finely chopped
Parmesan cheese
1/4 cup, grated
Garlic
2 cloves, minced
Salt and pepper

Greek yogurt
1/2 cup
Ouzo
2 tablespoons
Lemon juice

Roasting the Eggplant

Preheat the oven to 400°F (200°C).

Prick the eggplants with a fork and roast directly on the oven rack for 30 minutes, turning occasionally.

Let them cool completely, scoop out the flesh, and mash.

Let the eggplant cool completely before mixing it with the other ingredients to enhance the flavors.

Preparing the Fritters Mixture

In a mixing bowl, combine mashed eggplant with beaten egg, flour, breadcrumbs, parsley, Parmesan, garlic, salt, and pepper.
