Ingredients

For the Caldereta Filling

800 g beef chuck
cut into 1-inch cubes
2 tbsp vegetable oil
1 large onion, finely chopped
4 cloves garlic, minced
2 medium carrots, sliced
2 medium potatoes, diced
1 red bell pepper, diced
1 cup green peas
2 cups beef broth
1 cup tomato sauce
1/2 cup liver spread
2 bay leaves
Salt and pepper to taste

For the Puff Pastry Crust

2 sheets store-bought puff pastry, thawed
1 egg, beaten (for egg wash)

Preparing the Caldereta Filling

Heat oil

Heat vegetable oil in a large pot over medium heat.

Brown the beef

Brown the beef chunks in batches, ensuring each piece is seared on all sides. Remove and set aside.

Sauté aromatics

In the same pot, sauté onions and garlic until fragrant, about 2 minutes.

Building the Stew

Combine ingredients

Return beef to the pot. Add carrots, potatoes, bell pepper, green peas, beef broth, and tomato sauce.

Add seasonings

Stir in liver spread and bay leaves, then season with salt and pepper.

Simmer

Cover and let it simmer on low heat for 1.5 to 2 hours, or until beef is tender and sauce thickens.

If the sauce is too thin, remove the lid to reduce and thicken towards the end of cooking.
