Ingredients

For the Chicken Marinade

500g boneless, skinless chicken thighs
1/4 cup Greek yogurt
3 tbsp olive oil
2 cloves garlic, minced
1 lemon, juice and zest
1 tsp ground cumin
1 tsp smoked paprika
1/2 tsp cayenne pepper
Salt and black pepper, to taste

For the Hot Pepper Spread

2 red bell peppers, roasted and peeled
1/4 cup feta cheese
1 tbsp red wine vinegar
2 cloves garlic
1/2 tsp red pepper flakes
Salt, to taste

For the Gyros

4 large pita bread rounds
1/2 cup thinly sliced red onion
1/2 cup chopped fresh cilantro
1/2 cup diced tomatoes

For Garnishing

Crumbled feta cheese
Lemon wedges

Marinating the Chicken

Combine Ingredients

Combine Greek yogurt, olive oil, minced garlic, lemon juice and zest, cumin, smoked paprika, cayenne pepper, salt, and black pepper in a large bowl.

Add chicken thighs and coat well.

Cover and refrigerate for at least 2 hours, preferably overnight.
