1 block — pressed and diced
Soy sauce
2 tbsp
Lime juice
1 tbsp
Garlic
1 clove — minced

For the Coconut Curry

Coconut oil
2 tbsp
Onion
1 — chopped
Garlic
2 cloves — minced
Fresh ginger
1 tbsp — grated
Curry powder
2 tbsp
Coconut milk
1 can (13.5 oz)
Vegetable broth
1 cup
Red bell pepper
1 — sliced
Pineapple
1 cup — diced
Salt & pepper
to taste

For the Mango Ginger Sauce

Ripe mango
1 — peeled and diced
Fresh ginger
1 tbsp — grated
Lime juice
1 tbsp
Honey or agave syrup
1 tbsp

For the Garnishes

Fresh cilantro leaves
Sliced green onions

Marinating the Tofu

Combine Marinade Ingredients

In a bowl, combine soy sauce, lime juice, and minced garlic.

Coat the Tofu

Add diced tofu and toss gently to coat.

Let marinate for at least 15 minutes, flipping occasionally.

Preparing the Mango Ginger Sauce

In a blender, combine mango, ginger, lime juice, and honey.

Blend until smooth.
