2 large eggplants
washed and halved
2 tbsp olive oil
1/2 tsp salt

For the Spiced Tomato Gravy

2 tbsp ghee or vegetable oil
1 onion
finely chopped
2 tomatoes
chopped
3 cloves garlic
minced
1-inch ginger
grated
1 tsp cumin seeds
1 tsp ground coriander
1 tsp ground turmeric
1 tsp red chili powder
1/2 cup water
Salt to taste

For Garnishing

Fresh coriander leaves
chopped
Green chili
sliced

Roasting the Eggplant

Preheat your oven to 400°F (200°C).
