water
4 liters
sesame oil
1 tablespoon

For the Crispy Tofu

firm tofu
400g, pressed and cut into 1-inch cubes
soy sauce
2 tablespoons
cornstarch
1 tablespoon
vegetable oil
2 tablespoons

For the Miso Dressing

white miso paste
3 tablespoons
rice vinegar
2 tablespoons
soy sauce
1 tablespoon
honey
1 tablespoon
ginger, finely grated
1 teaspoon
garlic, minced
1 clove
sesame oil
2 tablespoons

For the Vegetables

cucumber, julienned

carrot, peeled and julienned

green onions, finely sliced

Preparing the Soba Noodles

Bring water to a boil in a large pot.

Add soba noodles and cook for 6 minutes.

Drain and rinse under cold water, and toss with sesame oil.

Rinse soba noodles under cold water immediately after cooking to stop the cooking process and maintain the texture.
