For the Dough

All-purpose flour
2 cups
Salt
1 teaspoon
Olive oil
1 tablespoon
Warm water
3/4 cup

For the Spinach and Feta Filling

Fresh spinach
2 cups, finely chopped
Feta cheese
1 cup, crumbled
Onion
1 small, finely chopped
Olive oil
1 tablespoon
Black pepper
1/4 teaspoon

Preparing the Dough

Mix dry ingredients

In a large bowl, mix flour and salt until combined.

Make a well in the center and add olive oil and water gradually, mixing until a dough begins to form.

Knead the dough on a floured surface for about 8 minutes until smooth. Cover and let rest for 30 minutes.

Preparing the Spinach and Feta Filling

Sauté onions

Heat olive oil in a skillet over medium heat. Sauté onions until translucent.

Cook spinach

Add chopped spinach, cook until wilted, and remove from heat.

Combine filling

Stir in the crumbled feta and black pepper, mixing thoroughly.

Ensure the filling is cooled completely before using and squeeze excess moisture from the spinach for a crispier Gözleme.

Cooking Process

Rolling the Dough

Divide the dough into 4 equal pieces. Roll each piece into a thin circle about 12 inches in diameter.

Aim for a uniform 12-inch diameter for even cooking.

Filling the Gözleme

Place the spinach and feta mixture on one half of the dough circle, fold over, and seal edges.

Frying the Gözleme

Heat olive oil in a large frying pan over medium heat. Cook each Gözleme until golden brown, about 3–4 minutes per side.

Maintain medium heat to achieve a crispy, golden crust.
