Ingredients

For the Guava Glaze

1 cup guava juice
1/4 cup honey
2 tbsp soy sauce
1 tbsp lime juice

For the Salmon

4 salmon fillets, skin-on (approximately 6 oz each)
Salt and pepper, to taste
2 tbsp olive oil

For the Tropical Salsa

1 cup diced pineapple
1/2 cup diced mango
1/4 cup finely chopped red onion
1/4 cup chopped fresh cilantro
1 tbsp lime juice
1 small jalapeño, minced

Marinating the Salmon

Season the Salmon

Season the salmon fillets with salt and pepper.

Mix Glaze and Oil

In a small bowl, mix 2 tbsp of the guava glaze with 1 tbsp of olive oil.

Brush the mixture over the salmon and let it marinate for 30 minutes in the refrigerator.

Do not over-marinate the salmon, as this can lead to a mushy texture.

Preparing the Tropical Salsa

In a medium bowl, combine the pineapple, mango, red onion, cilantro, lime juice, and jalapeño.

Adjust the heat by removing jalapeño seeds for milder heat or doubling the jalapeño for an extra kick.
