Ingredients

For the Beef Brisket

3 lbs beef brisket
trimmed
2 tbsp olive oil
1 large onion
sliced
4 cloves garlic
minced
1 tbsp ground allspice
1 tsp smoked paprika

For the Braising Liquid

2 cups ginger beer
1 cup beef stock
2 tbsp soy sauce
2 tbsp apple cider vinegar
1 tbsp brown sugar

For the Cilantro Rice

2 cups basmati rice
rinsed
4 cups water
1 tsp salt
1/2 cup fresh cilantro
chopped
1 lime
juiced

Marinating the Brisket

Season the brisket

Combine garlic, ground allspice, and smoked paprika, rubbing evenly over the surface of the brisket.

Marinate in fridge

Cover the brisket and let it marinate in the refrigerator for at least 2 hours, preferably overnight.

For deeper flavors, marinate overnight in the fridge.

Bring to room temperature

Remove the brisket from the fridge 30 minutes before cooking to allow it to come to room temperature.

Ensure the brisket is brought to room temperature before searing to ensure even cooking.

Preparing the Braising Liquid

In a large bowl, mix ginger beer, beef stock, soy sauce, apple cider vinegar, and brown sugar.
