Preparing the Oladi Batter
Dissolve yeast
In a large bowl, dissolve the yeast in lukewarm milk and let it sit for about 10 minutes until frothy.
Ensure the milk is only lukewarm, not hot, to activate the yeast without killing it.
Combine ingredients
Add the flour, sugar, vanilla extract, egg, and salt to the yeast mixture. Mix until smooth and lump-free.
Let batter rise
Cover the bowl with a clean cloth and let the batter rise in a warm place for about 45 minutes or until doubled in size.
Cooking Process
Heat the pan
Heat a non-stick pan over medium heat and add a little oil.
Fry the oladi
Pour about 2 tablespoons of batter per pancake onto the pan. Cook until bubbles form on the surface and the edges are golden, then flip and cook the other side until golden brown.
Arrange and serve
Arrange the oladi on a plate in a stack or spread in a circle. Accompany each serving with a dollop of sour cream and a side of your favorite jam.
